On Wednesday evening (July 10) police allege the man went to a motel in Merimbula, and pulled a knife on two employees before demanding money from the safe.
The man allegedly took mobile phones and car keys from the two employees, before leaving the premises in a Holden Commodore registered to the business.
Police were called to the scene and attended a short time later.
Several Merimbula residents commented on hearing the police sirens with one saying that driving home from Tathra at about 10.30pm he saw a car in the bush near the intersection of Sapphire Coast Drive and police with a man in handcuffs.
Police said that shortly after 10pm, the vehicle was located by officers from Traffic and Highway Patrol, who indicated for the vehicle to stop.
A pursuit was initiated and was terminated shortly after.
The man has been refused bail and is being held on remand.
He will face Bega Local Court on September 10.
