Levi Mc Ewan Hyde of Wheelers Seafood Restaurant and Erin Moore of Ryzy's Wine Bar practised together under the guidance of Commercial Cookery teacher David Arens.
Levi cooked the main meal which was a lamb cutlet with Middle Eastern rump, carrot puree, fondant potatoes, braised baby fennel, port jus and leek ash. This was follow by the dessert created by Erin which was a citrus parfait with rhubarb four ways, white chocolate and greek yogurt truffle, oat and almond crumble and grapefruit jellies.
“It took a few months of planning and experimenting to get it right,” Levi said.
“This is a sterling outcome for these two students,” Head Teacher of Tourism and Hospitality Deirdre Jory said.
“This shows the calibre of our regional students competing at a state level and achieving at the level of their city counterparts.”
Bega Tourism, Hospitality and Events staff and students are extremely proud of their achievements and Erin and Levi will be in the Illawarra TAFE team who will compete against other TAFE Campuses in October.
